Ingredients

1 cup red lentils (washed)

1 medium onion (chopped)

2 garlic cloves (minced)

1 carrot (diced)

1 zucchini (diced)

1 cup spinach (chopped)

4 cups vegetable broth

1 tablespoon olive oil

1 teaspoon cumin powder

1/2 teaspoon turmeric powder

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley for garnish

 

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
  2. Add carrots, zucchini, cumin, and turmeric. Cook for 3 minutes.
  3. Stir in lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add spinach and cook for 5 more minutes. Season with salt, pepper, and lemon juice.
